Start your meal with a bite-sized taste of Texas!

Rack of Ribs
Dry rubbed and smoked over mesquite coals.
 

Quail Legs
Hearty Texas farm-raised quail legs, lighty breaded with a kick of flavor!

Jalapeño Bites
Fresh jalapeños, stuffed with cream cheese, wrapped in bacon and roasted. Handmade with the help of Disability Resources, Inc. Served by the Dozen.
 

Steaks
All steaks are hand cut and trimmed from USDA choice aged beef, rubbed with Perini Ranch seasoning and grilled over glowing hot mesquite coals. Served with a ranch salad, choice of vegetable and sourdough bread.

16oz. Ribeye
Tom’s choice. Well-marbled with lots of flavor.

22 oz. Cowboy Ribeye
A Bone-In "Cowboy" Ribeye.  The bone adds even more flavor!

12oz. Peppered Strip
A center cut lean strip crusted with cracked peppercorns.

8oz. Filet
A center cut from the tenderloin. Lean and tender.

 

Ranch Roasted Prime Rib
A whole ribeye, rubbed with our special seasoning and pit roasted over mesquite coals. Served with Perini’s horseradish sauce. Limited Availability.

Hamburger Steak
Half-pound of beef, seasoned, hand patted and grilled. With Cheddar or Provolone cheese and topped with grilled mushrooms, green chiles and onions.

We can put it on a bun and serve it with chips for the ultimate hamburger!

Entreés
* Served with a ranch salad, choice of vegetable and sourdough bread.

Grilled Cajun Catfish *
Basted in butter and lime juice, then tossed in Cajun seasoning. Grilled and spicy! 

Mesquite Grilled Chicken Breast *
Seasoned and grilled over glowing hot mesquite coals.

Fried Catfish *
Farm raised filets rolled in seasoned cornmeal. Crisp, flaky and served with homemade chunky tartar sauce.

Dusted Jumbo Shrimp *
Eight large shrimp lightly dusted and fried to perfection.

Vegetables
Just like you would expect on a chuck wagon, but even better!

Green Chile Hominy
White hominy with bacon, green chile, and cheddar cheese. 

Old Fashioned Green Beans
Green beans the way you remember.

Zucchini Perini
Sliced zucchini rounds baked in an Italian meat sauce and topped with grated Parmesan cheese

Vegetable Plate
Any three vegetable dishes.

Cowboy Potatoes
Skin-on potato wedges, seasoned, and roasted with butter and garlic.

Ranch Salad
Hand torn lettuces with fresh mushrooms, radishes, cherry tomatoes, red onions and homemade buttermilk ranch dressing.

Chopped Blue Cheese Salad
Chopped fresh lettuce with crispy bacon, tomato and blue cheese dressing.

Perini Ranch Bread Pudding
With Jack Daniels Whiskey Sauce. The secret is sourdough bread and pecans.
 

Jalapeño Cheesecake
Sweet cheesecake drizzled with savory jalapeno jelly. A great mixture of flavors -- sweet, spicy and rich!

Strawberry Shortcake
Just like Tom’s great-grandmother made. Homemade sugar biscuits topped with warm strawberries. Heavy cream served on the side. 

Texas Chocolate Cake
